If you are like me, there is an abundance of colored Easter eggs hanging out in your fridge. While eating a hard boiled egg is just fine with me, eventually you want some variety. I love making this unbelievable easy and healthy Cobb salad from Autumn Calabrese. It fills you up without the heaviness you’d normally get from a traditional Cobb salad. It must be the light dressing and lean turkey bacon that make a difference!

Today my mother in law and I spent all morning restocking the groceries. We did my usual round of Costco + Trader Joe’s since they are just 10 minutes apart.  As much as I hate going to several different stores, each of them carries items I like the most. For example, at Costco we picked up fresh salmon for dinner last night and the quality of fish was unbelievable. Seafood at regular grocery stores has been hit or miss, so I’m sticking with Costco.

We also picked up a pack of wild albacore tuna cans.

3 ingredient healthy tuna salad

I used to often make tuna salad when we lived in Vegas because it’s so quick and easy but after meeting my husband I ventured into more sophisticated meals. Let me tell ya… Today I couldn’t get home fast enough to make it!  I don’t know if it was all the Easter egg leftovers in the fridge… or the fact that I bought real mayo first time in a while and it was calling my name.

I used to think that mayo was off limits in a healthy diet.  But reading Whole30 book has changed my perspective.  Of course, you still want to follow portion control and eat it in moderation.  You should also check the ingredients to make sure it is a soy-free product.  Hydrogenated soybean oil used in many store brands is a known source of inflammation so I avoid it when possible. But *real* mayo with *real* ingredients? YES PLEASE!

Healthy 3 ingredient tuna salad

So for my Healthy 3 ingredient tuna salad all I did was mixed 1 can of tuna, 1 chopped Easter egg 🙂 and a half spoon of mayo. Sprinkle with sea salt and pepper to taste, and load the mixture on top of romaine leaves. YUM!! This meal is loaded with protein and healthy fats. It will keep you full for hours and give you the energy to get through the rest of the day.

If you like to meal prep in advance, this Healthy 3 ingredient tuna salad would be wonderful for lunches.  Just whip up a double serving and divide between storage containers. It will keep well in the fridge for 3 days.
