If you’re a morning person who wakes up well before kids to leisurely enjoy her morning coffee and breakfast in a relaxed quiet of the morning – my hat’s off to you! If you’re not a morning person – or your kids don’t sleep past 6 AM – welcome to the club!
Mornings are generally the time I scramble to feed + entertain my 3 year old (because she is a raging animal until that tummy is full), get my 9 year old ready for school, while trying to get sips of coffee before it gets completely cold, and hopefully somewhere in between brush my teeth and generally assume a presentable look (read: get out of pajamas).
One time I took the kids to school in my PJs. It was a new low for me. But it was either that or we were going to be late. I really need to start waking up earlier.
You get the idea. MY BREAKFAST is not a priority haha! I might grab a bite of kids leftover’s but that’s usually it. What I’ve noticed though is that this habit made me hungrier and more tired throughout the day. I almost always wanted to snack on something carb-y around 10 AM along with a giant cup of coffee. It was time for a change.
That’s when I decided to give overnight oats a go. I liked the idea that you can prep them at night, and just reheat in the morning. Oats are generally one of the best breakfast options for active adults (mamas, yes I’m looking at you!).
Remember Hippocrates’ “food is medicine“? Well, here’s a perfect example! Oats are loaded with antioxidants, fiber, slow burning carbs and essential nutrients. This power combo regulates your blood sugar which in turn helps reduce inflammation in the body and lower cholesterol.
Oats are so versatile, you can make them into a sweet or savory concoction. I went with the traditional Fall pumpkin flavor for yumminess and added nutrients. That’s how Pumpkin Pie Overnight Oats recipe was born.
Pumpkin Pie Overnight Oats are naturally sweetened with honey and flavored with Pumpkin Spice. You get to eat your Pumpkin Pie without a sugar spike (and a subsequent crush) from the store bought version.

Busy Mom's Pumpkin Spice Overnight Oats

Ingredients
- 1 cup Gluten-free rolled oats
- 2/3 cup pumpkin puree canned
- 1 cup almond or coconut milk
- 1/2 tsp pumpkin spice
- 1/2 tsp cinnamon
- 1/3 cup toppings of choice: chopped walnuts, dried cranberries, raisins
Instructions

Mix all ingredients in a bowl in the evening.

Store in the fridge overnight in a tightly sealed Mason jar or a glass container.

In the morning reheat, and ass more milk if necessary.
