Hey friends! How’s your day going? I’m finally catching up on things and it feels so good! I started with cleaning the kitchen this morning. There is nothing like sparkly bright organized kitchen counters to put me in a groovy mood. The simple joys of a housewife HAHA!

So how many of you are still on the pumpkin wagon? I made a few pumpkin treats over the past few weeks, but lately I felt like taking a break 🙂

It’s funny how with the cooler temps, I turn into a bit of a cookie monster. Give me all the blueberry muffins in the summer, but come Fall I want my cookies.

After the previous baking fiasco, I felt it was time to redeem myself in the kitchen. So today I baked these mouthwatering gluten free chocolate chip cookies.

Packed with protein and healthy fats, this sweat treat won’t spike up your blood sugar levels and won’t go straight to your waist. It’s a perfect healthy dessert!

The cookies turned out even better than expected: crispy on the outside, gooey on the inside, just the right sweetness from honey and melting chocolate.

This is a huge victory for a guilt-free dessert!

When you start baking with “healthier” ingredients, you often find that something is lacking. Either the texture is off, or the flavor, or the form, or sometimes even the appearance.

Not with these guys. They have everything I ever wanted in a cookie and more!

Preparation in incredibly easy and took me less than ten minutes. I also love it that there are very few ingredients, that are usually in stock in my pantry.

The recipe was inspired by Elana Amsterdam’s recipe from The Gluten Free Almond Flour Cookbook. I made a few adjustments to better suite my taste and ingredients on hand. It came out perfect!

Make sure to use the blanched almond flour for this recipe. It will give your cookies that amazing fluffy texture. I get mine from Trader Joe’s and it’s not expensive at all.  You can also order Bob’s Red Mill super fine almond flour through Amazon.

As much as I wanted the batch to last few days, the cookies were gone within hours. The kiddos ate them with a glass of milk and I enjoyed mine with a cup of tea for a little mid afternoon pick me up.

Chocolate Chip Almond Cookies (gluten-free)

Easy, healthy, delicious chocolate chip cookies to satisfy your sweet tooth! Made of only good for you ingredients!
Ingredients
  • 2½ C blanched almond flour
  • ½ tsp sea salt
  • ½ tsp baking soda
  • ½ C grapeseed oil
  • ½ C honey
  • 1 Tbsp vanilla extract
  • ⅔ C chocolate chips
Instructions
  1. In a large bowl, combine the flour, salt, and baking soda.
  2. In a medium bowl, whisk together the oil, honey and vanilla.
  3. Combine the wet and dry ingredients.
  4. Fold in chocolate chips.
  5. Spoon 1 tablespoon at a time onto a baking sheet lined with parchment paper.
  6. Bake for 10 minutes.
