Happy Monday my fiends! Happy Easter to those who celebrated. Hope your Sunday was filled with all the amazing food and fun family time. Did you watch Jesus Christ Superstar Live last night? John Legend and the rest of the cast were on fire!
Our weekend was quite eventful. My mom flew back home, my in laws flew in and I managed to hurt my left hand playing football with the kids. We were at a nearby park and one of the boys threw a football at me. I caught it with my pinky totally dislocating it and fracturing the bone (as x-ray later showed). I put the finger back in place and ran home to get ice while mom was collecting the kids to bring them home. To be on the safe side, I saw a doc and got this pretty splint HAHA!
I went for 36 years without a single crack in my bones, so I’d say it’s a pretty god record. Have you had any finger injuries? How long did it take to heal?
Aside from the hospital run, we managed to have an amazing Easter weekend! Mom brought these gorgeous stickers for Easter eggs. You put the plastic over the egg, dip it in boiling water and it seals onto the egg like a glove!
We got our own *almost* Faberge eggs! Unfortunately I forgot to put them away in the fridge that night, so they are quite inedible at this point. We still like to look at them!
For an Easter egg hunt, we dressed up and ventured out to a local Wildlife Museum. Four years of living in Tucson and I’ve never been thinking it was outside and I dread the heat in the summer. Well, it was located inside a lovely castle like building with lots of cool exhibits of local dessert life. We will definitely be back.
Maria is obsessed with bunnies, so this time of the year is right up her alley 🙂
Do you have kids look for Easter baskets on Sunday morning? This is the second year we do this and kids have a blast! I threw a chocolate egg under each kid’s bed and asked to look. If they had an egg there, it means the Easter bunny came and they should look for their baskets.
The bunny hid them well this year. Maria found hers in a closet, and Dmitri’s was inside a washer! Inside the baskets this year we had new swim suites, bubbles, stickers, notepads, games, a tape measures for Dmitri and of course chocolate eggs and candy.
Easter dinner consisted of baked maple glazed ham on a bone, mashed potatoes and roasted vegetables (asparagus, tomatoes, broccoli). It was a perfect amount of food and totally hit the spot. Best part about ham is that you can enjoy the leftovers for a few days and turn it into new meals!
Friday before Easter I also made a double batch of my favorite Whole30 paleo Sweet Potato Shepherd’s Pie. We ate one batch and I save the other one in the freezer.
Per mother-in-law’s request I also made Butternut Squash Crustless Quiche, and it was a huge hit.
We’ve been enjoying it in the mornings topped with a dollop of Greek yogurt and fresh berries on the side for a tasty and satisfying meal.
I also tried to do a mini photo shoot with kiddos, “tried” being the key word. I don’t know how other mamas get all these beautiful photos of their children. Mine were either constantly on the move or giving me funny faces…
…until we finally got a decent shot but mom failed. I was so busy entertaining kids that I completely missed the shot frame. Oops!
Finally we got a keeper 🙂
It was such a wonderful but bitter sweet weekend for two reasons. Our husband and daddy had to miss it again due to work. And two, I was wondering how many more Easter egg hunts we have left before kids grow too old for this? Dmitri already had a skeptical look on his face when looking for the Easter baskets. Although he didn’t mind the findings 🙂
