One Pot Healthy 25 Minute Turkey Chili

Delicious and nutritious meal that is packed with lean protein and veggies. It comes together in under 20 min and stores well in the fridge & freezer. Perfect for make ahead lunches or dinner!
  • 1 lb raw ground turkey meat (lean)
  • 1 large onion
  • 1 red bell pepper, chopped
  • 1 yellow or green bell pepper chopped
  • 2 15 oz cans of stewed chopped tomatoes
  • 2 15 oz cans kidney beans, rinsed
  • 1 tsp oil (I use avocado or coconut)
  • 1 Tbsp chili powder
  • 1 tsp sea salt
  • 2 Tbsp chopped parsley
  1. Heat oil in a large pan.
  2. Add onions and bell peppers and cook stirring frequently for 2-3 min
  3. Add turkey and cook until no longer pink, 4-5 minutes
  4. Add remaining ingredients, stir and cook for 10 -12 minutes.
  5. Divide into bowls in serve with your favorite toppings: sour cream or Greek yogurt, avocado, shredded cheese, crushed tortilla chips, etc.
