Herbed Turkey Loaf: delicious family meal (paleo + gluten free + Whole30)

Healthy meal with few ingredients your entire family will love. It's Whole30 approved, paleo and gluten free. Enjoy it with a giant salad and serve it with mash potatoes for your husband and kids.
  • 1 lb ground turkey
  • 1 Tbsp olive oil
  • 1 onion, finely chopped
  • ½ C shredded zucchini
  • 2 large eggs, whisked
  • ¼ C ketchup
  • ½ C blanched almond flour
  • ½ tsp garlic powder
  • 1 tsp salt
  • ½ tsp black pepper, freshly ground is best
  • ¼ C fresh parsley, finely chopped
  • 1 tsp thyme
  1. Preheat oven to 350 degrees.
  2. Line a large baking sheet with parchment paper.
  3. In a large bowl, combine the turkey, olive oil, onion, zucchini, eggs, ketchup, and garlic powder.
  4. In a medium bowl, combine the remaining ingredients.
  5. Stir the almond flour mixture into the wet ingredients, then knead with your hands until well combined.
  6. Place the mixture onto the prepared baking sheet and form it into a loaf approximately 10 x 3 inches.
  7. Bake for 1 hour until browned around the edges and cooked through.
