Roasted vegetables pasta + Giveaway winner!

Healthy and delicious dinner you can serve to entire family. Kid-approved! Delicious as is or as a side dish.
Ingredients
  • Spaghetti of choice (I used Organic Chickpea Spaghetti)
  • 1 Red bell pepper
  • 1 Green bell pepper
  • ½ Yellow bell pepper
  • 1 zucchini
  • 1 yellow squash
  • 1 purple sweet onion
  • Olive oil
  • Salt, pepper, garlic salt, oregano
  • Dressing:
  • 1 tbs sesame oil
  • 1 tbs soy sauce
  • 1 tbs rice vinegar
  • black pepper
Instructions
  1. Preheat the oven to 400 degrees F.
  2. Chop all the veggies and toss with olive oil and seasonings.
  3. Spread on a baking sheet in thin layer and roast for 30 min.
  4. Cook spaghetti according to instructions.
  5. Whisk the dressing together.
  6. Combine the roasted vegetables, spaghetti and the dressing together,
