Chocolate chip pumpkin cookie cake (gluten free + paleo)

Deliciously healthy and guilt free dessert for you and your family this Fall. Free of sugar, wheat flour, gluten and butter, this pumpkin cookie cake will rock your world!
  • 1 C almond flour
  • ½ tsp baking soda
  • pinch of sea salt
  • ½ C almond butter
  • 2 eggs
  • ⅔ C pumpkin puree
  • 2 Tbsp honey or coconut sugar
  • 1 tsp vanilla
  • 1 tsp pumpkin spice
  • ½ C chocolate chips
  1. Preheat oven to 350 and spray a 9 inch round dish with nonstick spray.
  2. In a small bowl, mix almond flour, baking soda and salt.
  3. In a separate bowl, whisk almond butter and eggs.
  4. Gently stir the dry mix into the wet ingredients.
  5. Add pumpkin puree and remaining ingredients to the bowl.
  6. Pour the mixture into a prepared baking dish and bake for 25 minutes.
  7. Allow to cool completely and store in the fridge.
