If you are stuck in a salad rut, try this simple recipe. It will knock your socks off! Prep enough eggs and bacon to last you several days and you got lunches covered!
  • 1 C chopped romaine lettuce
  • 1 C raw baby spinach
  • 1 hard boiled egg, cut into quarters
  • 1 slice cooked lean turkey bacon, chopped
  • 1 Tbsp chopped avocado
  • 1 Tbsp crumbled blue cheese
  • 2 Tbsp home made salad dressing
  1. Place greens on a service plate.
  2. Top with remaining ingredients.
  3. Drizzle with home made dressing and enjoy!
  4. For a dressing mix olive oil. balsamic vinegar, honey, dijon mustard, salt & pepper.
