Romesco garlic shrimp with zucchini noodles, Whole30 & paleo-friendly dinner

This Whole30 approved and paleo friendly dinner comes together in under 20 minutes and fills you with the right balance of proteins, vegetables and healthy fats.
  • 4 medium zucchini
  • 2 Tbsp cooking butter or ghee
  • ¼ onion finely chopped
  • ½ tsp garlic poweder
  • 1 lb large shrimp
  • 1 tsp salt
  • ½ tsp pepper
  • 2 tsp fresh parsley
  • romesco sauce
  1. Peel the zucchini and use vegetable spirilizer or a julienne peeler to make zucchini noodles. Set aside.
  2. Melt butter in a pan over medium heat.
  3. Add onion and cook for 2 min, stirring.
  4. Add garlic and cook for 1 min.
  5. Add the shrimp and stir to combine. Cook for 2 min.
  6. Add ¼ cup of hot water to the pan and close the lid. Cook for another 4-5 minutes.
  7. Sprinkle the shrimp with parsley, toss and spoon over noodles. Top with romesco sauce and serve.
