Gluten free paleo blueberry muffins

No sugar, no butter, no flour, only real food, clean ingredients, these paleo gluten free muffins taste like a blueberry cobbler pie and are actually good for you! Enjoy warm for a healthy and fulfilling treat.
Ingredients
  • 1C fresh blueberries
  • 1C almond flour
  • ½ tsp baking powder
  • ½ tsp baking soda
  • 4 Tbsp honey
  • 2 Tbsp coconut oil
  • 2 eggs
  • 1 tsp vanilla
  • 1 Tbsp lemon juice
Instructions
  1. Preheat the oven to 350 degrees.
  2. In a small bowl combine all the dry ingredients.
  3. Add the remaining ingredients except the blueberries and stir to combine.
  4. Add the blueberries and gently stir.
  5. Spoon the mixture into muffin tins sprayed with coconut cooking spray.
  6. Bake for 20 min or until cooked through.
