Healthy chicken salad that will rock your world (gluten free + paleo)
Healthy and satisfying salad that is easy to make and stores well in the fridge. Make a big batch to last you all week for lunches. Serve atop a green salad or wrap in a whole wheat tortilla with greens.
  • 3C chopped rotisserie chicken breast, boneless
  • ⅔C chopped green apple
  • ⅔C chopped red grapes, cut in half
  • ⅓C sliced raw almonds
  • 2 green onions, sliced
  • ⅓C Honey Mustard Dressing (ingredients below)
  • ½C plain Greek yogurt
  • 3 Tbsp Dijon mustard
  • 3 Tbsp raw honey
  • 3 Tbsp rice vinegar
  • ¼C extra virgin olive oil
  1. Combine chopped chicken, apple, grapes, almonds and green onion in a bowl.
  2. Pour Honey Mustard Dressing over the salad and mix well.
  3. Refrigerate for 2 hours.
  4. To make the dressing: mix yogurt, mustard, honey and vinegar in a bowl. Slowly whisk in oil until well blended.
