Sweet potato Shepherd's Pie that's good for you (Whole30 + gluten free)

Healthy, delicious and easy one-pot meal. It's Whole30 approved, gluten free and paleo friendly. Freezes well for a backup meal during a workweek.
  • 3 sweet potatoes, peeled and large-diced
  • 4 Tbsp ghee or coconut oil
  • ⅔ C coconut milk
  • 1 onion, finely chopped
  • 3 stalks of celery, finely chopped
  • 2 small carrots, peeled and finely chopped
  • 1 lb ground beef
  • ½ tsp dried thyme
  • ½ tsp dried oregano leaves
  • garlic powder, salt + pepper to taste
  1. Preheat the oven to 375 degrees.
  2. In a large pot, boil sweet potatoes for about 10 min until soft.
  3. Drain the water from the pot and add 2 Tbsp ghee and the coconut milk.
  4. Use immersion blender or a large kitchen fork to blend the mixture.
  5. In a large pan, heat 2 Tbsp of ghee.
  6. Add onions, celery and carrots and cook for 5 min stirring.
  7. Add the meat, and garlic power and saute for 10 min stirring.
  8. Season with salt, pepper, thyme and oregano.
  9. Spoon meat mixture evenly over the bottom of a casserole dish.
  10. Spread mashed potatoes over the top.
  11. Roast in the oven for 30 minutes.
