Heyyy friends! How’s your week going? Ours has been very low key as the kids and husband are recovering from a stomach flu. Somehow I managed to escape the all fun and I credit it to my good ol’ Shakeology’s probiotics formula 🙂 Since the main items on the family menu were pretty basic (toast, rice, bananas and water) I made myself this simple salad. It hits the spot every.single.time!
All we wanted to do was snuggle and watch cartoons over the weekend. Needless to say, meal planning didn’t happen. So today I had to brain storm on the go and after inspecting the fridge came up with this deliciously refreshing and satisfying gluten-free veggie pasta salad.
For the pasta, I used Ancient Harvest gluten free quinoa rotini. It has a beautiful texture that resembles wheat pasta more than any others I tried. I get mine from Trader Joes, but you can also order it on Amazon.
While pasta was cooking, I chopped the veggies: cucumber, tomatoes, bell peppers, zucchini and parsley. You can also try asparagus, green onions and whatever you have on hand.
I drained the pasta, let it cool off a bit and mixed all the ingredients in a large bowl. Any home made dressing would work well here but my favorite one is a simple mix of equal parts extra virgin olive oil and lemon juice, salt and pepper. You would need about a 1/3 cup of dressing. Pour over pasta, mix once again and enjoy!
This salad is best served chilled. You can eat as is, or add a protein (grilled chicken breast or turkey lunch meat goes lovely with this dish). Sometimes I also like to add 1 Table spoon of Greek yogurt for a creamier texture.
This would be a perfect lunch to prepare in advance if you are meal planning. Make a large batch and divide between lunch containers to last you through a work week. Use different toppings to keep it interesting 🙂 Here is a recipe is you want to give it a try:
- 1C quinoa rotini pasta
- 1 bell pepper
- 1 medium size tomato
- 1 zucchini
- 1 cucumber
- ¼C chopped fresh parsley
- Extra virgin olive oil, lemon juice, salt & pepper for a dressing
- Boil pasta according to instructions.
- While pasta is boiling, chop all the vegetables.
- Drain pasta and mix with the chopped vegetables.
- Whisk together olive oil, lemon juice, salt and pepper.
- Pour the dressing over the salad and toss to mix.
