Heyyy lovely friends! It’s officially June and it’s the weekend! Are you doing anything fun? We are visiting family in South Carolina and I can’t wait to share the pics with ya. Little Miss is a total beach girl! We splashed in the waves and built sand castles all morning. She is resting now and I slipped away to a coffee shop/bakery to write this post. If you are meal planning for next week, I’ve got your back. I’m so excited to share One Pot Healthy Turkey Chili recipe with you today! It’s my absolute favorite dinner to make when I am short on time + ingredients + inspiration but I still want to have something healthy and fulfilling to put on the table. Originally, I found this recipe on www.beachbody.com website when searching for 21 Day Fix approved recipes and I customized it slightly since then. This dish is equally liked by kids and grown-ups in our family which makes it an easy choice. My biggest fear is that I overeat it at some point and will not like it anymore LOL
This healthy turkey chili requires few ingredients. Most of them I make sure to keep on hand at all times: ground turkey, frozen chopped onions, bell peppers, kidney beans, canned stewed tomatoes. The best thing about this recipe is that the ONLY thing you actually have to chop is the bell peppers!! On this particular day, my grocery store ran out of frozen chopped onions – so unacceptable – so I was like um do I have to chop an onion now? LOL First world problems 🙂
As if that was not enough to convince you give it a try, here is a cherry on top. This healthy turkey chili is an excellent choice for a meal prep! I usually double the batch and freeze half. The remaining chili could be portioned out into small containers for a quick grab and go lunch. Or you could serve it all to your family for dinner and hope there are any leftovers 🙂
The preparation part is insanely easy. You sauté onions and bell peppers, brown the turkey, then add the remaining ingredients to the same pot. This chili is truly a one pot meal!! Which means the clean up is minimal –>> greatly appreciated by busy mamas around the world 🙂
So you just mix everything, let it simmer on medium for 10-12 minutes (or longer if you have time), and a nutritious dinner is ready to be served!

Here you’re getting a well balanced meal full of lean protein, vegetables, fiber, nutrients and a whole lot of deliciousness.
Eat as is or serve with your favorite toppings. We love to top our chili with a heaping spoonful of Greek yogurt (as a substitute for sour cream, but feel free to use sour cream too!), 1/4 chopped avocado if we have it on hand and a sprinkle of cheese. YUM!

One Pot Healthy 25 Minute Turkey Chili
- 1 lb raw ground turkey meat (lean)
- 1 large onion
- 1 red bell pepper, chopped
- 1 yellow or green bell pepper chopped
- 2 15 oz cans of stewed chopped tomatoes
- 2 15 oz cans kidney beans, rinsed
- 1 tsp oil (I use avocado or coconut)
- 1 Tbsp chili powder
- 1 tsp sea salt
- 2 Tbsp chopped parsley
- Heat oil in a large pan.
- Add onions and bell peppers and cook stirring frequently for 2-3 min
- Add turkey and cook until no longer pink, 4-5 minutes
- Add remaining ingredients, stir and cook for 10 -12 minutes.
- Divide into bowls in serve with your favorite toppings: sour cream or Greek yogurt, avocado, shredded cheese, crushed tortilla chips, etc.
