Hey friends! Hope you are having a wonderful day. I took advantage of slightly cooler temps and went for a quick run this morning. For those of you following my 5K training journey – sorry I haven’t posted too many updates. I switched focus to Insanity Max30 training with one of my challenge groups for a while but now I’m slowly adding running back into my routine. Sadly, some of the progress has been lost over the break and I had to go back to Week 4 in my Couch to 5K app. I’m still set to running a 5K this year is set in stone!

Prep time for recipes averages 10-20 minutes and requires simple ingredients. We love making this Healthy Cobb Salad, protein pancakes, Italian wedding soup with turkey meatballs, Mexican taco meat and today I enjoyed this Healthy Chicken Salad for lunch.
When shopping at Costco, I always grab 2 rotisserie chickens. I mean you can’t beat the $4.99 price tag for the fully cooked whole chicken! Then, I use the breast meat for either soups for kids or variations of a chicken salad. For the longest time, my favorite combo was the pulled chicken breast+chopped celery+chopped walnuts+Greek yogurt. Sometimes I’d add some chopped apple. But then I found this recipe and it’s my new go to.
This Healthy Chicken Salad from FixAte cookbook is an ideal lunch for those who like to meal prep in advance. The salad keeps well in the fridge and makes a healthy and satisfying lunch. Prep time is just under 15 minutes, and all the ingredients are pretty basic: rotisserie chicken, apples and grapes. That’s it 🙂
What gives this salad it’s creamy texture is the home made dressing! There’s a mixture of Greek yogurt, honey and mustard for a base and it tastes so delicious! I love to serve this salad atop a plate of chopped romaine and spinach or wrapped in a whole wheat tortilla, if I want to change things up.

Healthy Creamy Chicken Salad (gluten-free + paleo friendly)
- 3C chopped rotisserie chicken breast, boneless
- ⅔C chopped green apple
- ⅔C chopped red grapes, cut in half
- ⅓C sliced raw almonds
- 2 green onions, sliced
- ⅓C Honey Mustard Dressing (ingredients below)
- ½C plain Greek yogurt
- 3 Tbsp Dijon mustard
- 3 Tbsp raw honey
- 3 Tbsp rice vinegar
- ¼C extra virgin olive oil
- Combine chopped chicken, apple, grapes, almonds and green onion in a bowl.
- Pour Honey Mustard Dressing over the salad and mix well.
- Refrigerate for 2 hours.
- To make the dressing: mix yogurt, mustard, honey and vinegar in a bowl. Slowly whisk in oil until well blended.
