Hey friends! How’s your day going? Our weekend has officially began due to the Rodeo days in Tucson. It’s a fun annual tradition that draws visitors to the city every year and the schools close. Since the kids stayed home, we decided it was a must to check out the Rodeo Parade this morning. It was fun to watch all the horses, ponies and decorated carriages parade through the streets. I just wish we could see the rodeo too which was set to start in a few hours. Next time for sure!
We got home just in time for lunch and I quickly whipped up this salad:
Last year I purchased Fixate Cookbook written by Autumn Calabrese, the creator of 21 Day Fix, Fix Extreme and Country Heat. The Fixate meal plan that I follow was an adjustment at first and I wanted to have every tool possible. So far every single recipe we tried was spot on: simple, easy, with good ingredients and full of flavor. It’s like clean eating meet fast food at its best!
When I was meal planning for this week and looking through my cookbooks, this salad from Fixate book jumped at me as something I don’t normally eat (hello salad rut!) but would be fun to try. Plus, the only ingredients I really needed to prepare were: boiled eggs, cooked bacon and chopped Romaine lettuce. So when we got home from the Parade, all I had to do was mix all the stuff and chop a quarter size of an avocado.
This salad totally hit the spot! Very light, yet filling, with savory crunchiness from bacon and creaminess from avocado and blue cheese – it was perfect! I love it that most Fixate recipes are the right balance of proteins, healthy fats and greens. It won’t leave you feeling heavy after a meal like some heavier options do.
This is an easy salad to pack for work/school too. The ingredients will stay fresh in your fridge for days. All it takes is a few minutes to throw them together the night before and – boom! – lunch is ready! And if you are like me, and you meal plan a week in advance – you will appreciate having a fresh salad option with minimal advance prepping throughout the week. Here is the recipe if you’d like to give it a try.
- 1 C chopped romaine lettuce
- 1 C raw baby spinach
- 1 hard boiled egg, cut into quarters
- 1 slice cooked lean turkey bacon, chopped
- 1 Tbsp chopped avocado
- 1 Tbsp crumbled blue cheese
- 2 Tbsp home made salad dressing
- Place greens on a service plate.
- Top with remaining ingredients.
- Drizzle with home made dressing and enjoy!
- For a dressing mix olive oil. balsamic vinegar, honey, dijon mustard, salt & pepper.
