Heyy friends!  Happy Monday!  Hope new week is starting off well for ya. We’re still in a weekend/vacation mode since we just came back from a wedding in California and schools are closed today for a holiday. I can’t wait to share the pics with you! The bride wore this stunning Vera Wang ruffled gown. She looked like a princess from a fairy tale gliding down the lake on a boat for her entrance. It was breath taking!

Maria was invited to be the flower girl but she got sick the day before our trip. Talking about timing… My mother (a.k.a. the BEST MIL) kindly agreed to stay home with her. I had knots in my stomach leaving my little munchkin behind as Dmitri and I got on the road. All I wanted to do was to cuddle with her. But I knew she was in good hands. And I had Maid of Honor duties to attend to.

The rehearsal and the wedding took place in a beautiful wine region of California.  After the festivities were over, my little partner and I headed to San Diego for a day. We managed to squeeze in a quick trip to the Sea World and a tour of USS Midway.

I’ll be back with a full report and share a few amazing dining spots we found in San Diego.

Also… There is something exciting that I wanted to share with you today and that is Athleta Semi-annual sale! I absolutely love their workout and casual clothes for their style, quality and durability. Prices are on the higher end but this sale makes it a perfect opportunity to stock up on your favorites! I’ll probably get this tank and this one.

After I finished browsing through the sale, it was time to make lunch for the Fam:

Corn Bread Taco Meat Casserole. YUM!  It’s been a while since I’ve made this dish and I forgot how good it is!

You would half bake corn bread according to instructions, top it with cooked taco seasoned meat mixed with black beans. Top casserole with a mixture of sour cream, chopped onions and Mexican cheese, then bake at 350 for 20 min. Top with chopped tomatoes, shredded lettuce, more cheese and black olives. Boom!  If you have family or friends visiting, give it a try. This dish is a true crowd-pleaser!!!

For now we are just resting (=unpacking from the trip) and enjoying family time.

Years ago (=before kids) I was big time into making fresh juice and was known for throwing Juicing Parties. You bring your own ingredients, we throw them in my juicer.

Friends who juice together stay together 🙂

When kids were little I barely had time to take a shower, not to mention taking apart and cleaning the machine. So it sat patiently waiting for its time in my kitchen closet. Until my best friend came for a visit (read more on it HERE) and pulled the old beast of a juice maker out.

She made fresh juices for us every day which quickly reinvigorated my interest. Perhaps I was just too lazy to move the juice maker back to the closet. Aaaand I had leftover ingredients. You get the idea. I fell back in love with juicing.

Not only you get a lovely refreshing drink. You feed your body with powerful vitamins, minerals and plant chemicals (phytonutrients) in an easily digestible form (Source: Mayo Clinic).

I always love the boost of energy I get immediately after a glass of fresh juice. If you are new to juicing, here are a few suggestions:

  • Prepare your ingredients by washing well, but don’t feel like you have to peel or cut off skin
  • Drink juice within 15 minutes of processing to capture the nutrients
  • Drink on empty stomach to maximize the absorption
  • Experiment with your favorite ingredients

My favorite combo right now is carrots, celery, greens, parsley, green apple and ginger. Sometimes I’d also add half a raw beet. Beets have a powerful nutritional profile with strong antioxidant and anti-inflammatory properties. I recommend mixing in beets with other vegetables and using only a small amount to avoid getting nauseous.

There is so much info out there about juicing. Some vegetables are known to target certain conditions with consistent consumption. As a firm believer that food is medicine, I am deeply interested in doing more research and experimenting with juicing. I’ll make sure to share my findings with you on the blog.
