How’s your week going? Any exciting plans for the weekend? We are gearing up for the Super Bowl on Sunday. My husband is a huge football fan, and I’m just usually there for the commercials. But this year is different for TWO reasons: 1. My husband is from Philly so obviously a big day on Sunday for our fam and 2. This is Us finale is after the game. Kleenex tissues have been restocked in anticipation.

In the meanwhile, I’ve been scouring Pinterest for game day snacks. Thinking this Philly Cheese Steak recipe from Bobby Flay and this pasta salad need to happen on Sunday. What are your go to snacks? I’d love to hear!

I’ve been using Fixate cookbook by Autumn Calabrese (one of my favorite celebrity trainers) for over two years now. Most of her recipes are easy, healthy and require very few ingredients. Needless to say, quite a few dishes became a staple at our house. I’ve shared a few of them on my blog:

I also adopted one of her recipes into Turkey Zucchini Noodles which I make at least a three times a months.

This is a perfect make ahead meal. It stores well in the fridge for 3-4 days.

You may also double the recipe and freeze half for later.

I usually separate zoodles and turkey meat into two separate containers. Then when it’s meal time, I mix them in my bowl and voila!

This meal is just as yummy with traditional spaghetti in place of zoodles. I personally prefer zucchini noodles though because they are easier and quicker to make using this spiralizer than boiling the noodles. It tastes just as good without all the calories. #Win
