Hello friends! Thanks so much for your comments on my When Your Toddler Won’t Sleep post. It really helped to know how other parents struggled with similar issues. I actually think we’ve turned the corner. Knock on wood, but Maria slept through the night 3 days in a row. I am starting to feel like a human again 🙂

Since our weekend has been a little crazy, meal planning and prepping just didn’t happen. But I made sure to make up for it once kids when to school. We really needed it. The fridge was starting to look pathetic.

So first, I made a trip to Trader Joe’s and stocked up on some essentials:

I have a system where I go in with a list. And then buy 10x more. Did that ever happen to you? Only at Trader Joe’s…

In my defense, all the things get properly consumed, so we don’t really waste any products.

My latest find that was not on the list? – Matcha Green tea in a can and Matcha Green Tea powder.

So as many moms know, coffee is what allows us to operate smoothly on most days. However, I’ve noticed that my second cup of coffee in the afternoon is A. not so enjoyable (it just doesn’t taste the same as in the morning) and B. wrecks havoc on my sleep at night. So I’ve been looking for alternatives and Matcha tea came to mind.

Friends, I have to say it’s been amazing! Matcha tea gives me a nice boost of energy but it’s a more smooth sail.

Coffee fires up my engines. I go from a 2 to a 10 in the matter of minutes on a mommy readiness scale. Get me out of bed, hand me a cup of coffee, and I am ready to “mom”. Matcha gives you a gentle push 🙂

Mamas, have you tried “when a blueberry/fig/strawberry walks into a bar” cereal bars from Trader Joe’s? When my toddler was sick that was the only thing I was able to get in her in the mornings (and was so grateful for that). A pack of 4 is only $1.99 and is well worth it.

Other essentials included: coconut milk, Kalamata olives (I love adding those to salads to change things up!), Power organic antioxidant juice blend and organic beans.

I also stocked up on juicing essentials 🙂

Yup, my juicing game is still going strong. I’ve found that freshly squeezed juice works equally well to give me a boost of energy. But what’s more important –> my skin started to glow. Mind you, I  didn’t wash my face in the evenings as I should have over the last couple weeks. I know. That’s the worst.

My cosmetologist friend tells me you age a year for each day you don’t rinse off your face at night. I’m trying not to count how many nights I missed… Luckily, now that the kids are all better and sleeping through the night, I’m back in the game.

But the fact remains that my skin started to look better despite all the neglect! When you see results like that, it kind of motivates you to keep going. I’m juicing almost every day now.

One thing that usually derails me is the thought of chopping/prepping all the veggies. So yesterday I decided to take things to the next level. After grocery shopping, I washed and pre-chopped carrots, celery, green apples, lemons, raw beets and threw them in plastic bags. All I have to do is add washed spinach, kale or whatever greens I am using that day, add a chunk of fresh ginger and there you go!

I don’t really watch proportions but somehow always end up with the same amount 🙂 Roughly my youth juice is  2 parts of carrot, 1 part celery, 1 part green apples, 1/4 medium beet, 2 handfuls of greens, 1/3 lemon and a 1/2 inch ginger knob.

The result is usually a slightly tangy refreshing drink with aromas of lemon and ginger. I take little sips because the break down of carbohydrates by enzymes starts in the mouth (Source). For the same reason, you should always chew carb-rich meals very thoroughly to help digestion. Also, make sure to finish your drink within 15 minutes to capture all the nutrients.
