Hello lovely ladies! How was your Mother’s Day weekend? Hope that all moms were spoiled a little and loved a lot!
Our weekend was a perfect mix of activities and fun. We hosted a little backyard barbecue with good friends. For such occasion I whipped together my favorite pasta salad, which is a version of this one. There is arugula, marinated artichokes, sun-dried tomatoes, feta cheese and whole wheat pasta. It was a big hit at the party.
I was also super excited to put together my first cheese board! I saw this cutting board at Bed Bath and Beyond and I just fell in love with it. Luckily it was a Mother’s Day weekend and I had a 20% off coupon in my purse 🙂 Done deal!
There were also my favorite kale and Brussels spouts salad mix from Costco, pulled pork barbecue sandwiches, and grilled chicken. To top things off, I made chocolate cupcakes with peanut butter frosting. They were almost a total fail…
That morning I was so busy cleaning and cooking for the party, that I somehow forgot to use cupcake liners for the batter. HUGE mistake. I ended up scraping the cupcakes out of the muffin tin and almost threw the entire thing into a trash cash. It was definitely not my first rodeo baking things but somehow this one got screwed up.
Luckily, the presentation was saved by these amazing cupcake toppers from Glitter and Pearl. The owner is a very talented lady and I’ve used her in the past for cupcakes. Check out her page and see all the pretty creations!
Saturday was pretty low key. We spent some time at the pool, watched a lacrosse game on TV and played in the backyard. It was perfect. We also enjoyed all the leftovers. My boys couldn’t get enough of the pulled port sandwiches and the past salad. And I threw together this pretty bowl:
The aforementioned pasta salad topped with more arugula, chopped avocado and low sodium turkey lunch meat. YUM! I want to eat this evvvery day.
Sunday started with hugs, kisses and cards from the people who made me a mom <3 And then, the ultimate “spoil-cation” – a trip to my favorite spot in Tucson for Mother’s Day brunch.
We ended up arriving an hour before the reservation and walked to lovely trails. I kept reminding myself to enjoy every minute. This is probably going to the last time we come here till the next year.

We found a pretty impressive waterfall and a few springs. Kids had a blast sending weeds down the stream!

Brunch was absolutely amazing, as always. This time I had a strategy and stuck to my favorites: seafood + desserts HAHA!
But the best thing of all was seeing these together. Maria is not a huge hugger, so it was pretty rare to see her climbing on her Big Bah to guve him hugs and kisses at brunch. My heart was melting.
