Hey friends! Today I wanted to share my go to easy and healthy recipe that also happens to be a family’s favorite – Easy Sheet Pan Lemony Salmon and Asparagus. This dinner is my favorite too for three reasons:
- It comes together in under 20 minutes, so it’s perfect for a weeknight dinner.
- Only one dish to clean
- It’s deliciously nutritious, packed with healthy fats, proteins, and fiber.
I usually get a giant chunk (2-3 lbs) of salmon filet from Costco. It’s farm raised, which is not ideal but at least they promise no use of antibiotics.
I cut the filet in serving portions, season with my favorite seasonings, drizzle with lemon juice and lay on a greased baking sheet along with veggies. Asparagus is my favorite but sometimes I add cherry tomatoes too. Ten minutes later you have a delicious dinner waiting for you. Boom!
Another tip: line the sheet pan with foil to minimize cleaning. You’re welcome! 🙂
Here’s the recipe if you want to give it a try. Print now or Pin for later.
