Good morning! 🙂 How’s your week going? My kiddos are back to school and a small part of me is glad to return to the usual routine. Our schedule was jam packed with road trips and fun activities the past 2 weeks, which didn’t leave much time for meal planning or workouts. Back to the grind!! 🙂
I dropped off my son at school and went for a run, which ended up being more of a jog. I’m SOOO out of shape you guys! Following my initial success with Couch to 5K program, I actually had to go back to Week 6 on the app. My lungs were on fire and I quietly made a promise to stay consistent from now on.
It was nice and cloudy with a refreshing wind, so I let Little Miss play in the backyard while I streamed a quick core workout on an iPad. It was perfect 🙂
After my workout, we bounced on a trampoline for a while and took it inside for a meal planning session. YAY! Can’t tell ya how excited I was to get back into it! Armed with a paper and pencil, I pulled out my recipe books and binders to find inspiration for the week’s eats (check out favorite resources and tips here). That’s when I came across a recipe for these gluten free paleo blueberry muffins. It’s been a while since I’ve made them and I instantly knew it was time.
These healthy gluten free and paleo friendly muffins are made of pure goodness: almond flour, honey, eggs, almond butter, coconut oil. These are my favorite baking ingredients that I always keep on hand. If you’ve experimented with gluten free flours before, they can sometimes turn your baked goodies dry and hard. These muffins are so soft and moist from blueberries and coconut oil! They taste like a blueberry cobbler pie! A pie that is actually good for you 😉 Definitely one of my favorite healthy and satisfying treats that will keep you full for hours without spiking up your blood sugar level.
This recipe calls for a cup of blueberries, so I usually wait until they are in season and cost less than a gold ring. Luckily I had a container in my fridge. Score!
If you follow my blog, you probably know that I am all about quick and healthy recipes. This one takes less than 10 for prep. First you mix the dry ingredients, then add everything else in. Scoop the mixture gently into prepared muffin tins and bake for 20 minutes. Wait till they cool down, if you can 🙂
My entire family loved the muffins and they were gone before I could stash a few away in the freezer. Happy tummies around here! They never realized that there was no sugar, no flour and no butter in those muffins. Enjoy these yummies warm or topped with a scoop of vanilla ice cream for the ultimate experience. Healthy Gluten Free Paleo Blueberry Muffins
- 1C fresh blueberries
- 1C almond flour
- ½ tsp baking powder
- ½ tsp baking soda
- 4 Tbsp honey
- 2 Tbsp coconut oil
- 2 eggs
- 1 tsp vanilla
- 1 Tbsp lemon juice
- Preheat the oven to 350 degrees.
- In a small bowl combine all the dry ingredients.
- Add the remaining ingredients except the blueberries and stir to combine.
- Add the blueberries and gently stir.
- Spoon the mixture into muffin tins sprayed with coconut cooking spray.
- Bake for 20 min or until cooked through.
