Heyy friends!! Happy Friday! How’s your week been? I am super excited to share another favorite recipe with you, in case you’re looking to try something new. I’ve been eyeing The Gluten-Free Almond Flour Cookbook on Amazon for a while and finally bought a copy. Best $9 spent!! 🙂 Elana shares a ton of amazing recipes on her blog, but there is nothing like meal planning with a real book. I’m old fashioned like that. As soon as the book arrived I marked a few recipes I wanted to try right away.
One of them was Herbed Turkey Loaf. It is a healthy, paleo, gluten free and Whole30 appropriate meal. It’s perfect for those who gave up red meat for health reasons or those with cholesterol concerns (turkey meat is a lean type with almost very little fat). I personally like to buy large batches of organic ground turkey from Costco and mostly use it for One Pot Healthy Turkey Chili (it’s SO GOOD and easy to make that we have it on weekly rotation). So it was nice to change it up a little and try something new.
I was immediately intrigued and excited because one of the ingredients listed was shredded zucchini! Overall there were very few ingredients, and it was definitely one of those recipes that I was going in thinking it’s either going to be the best ever or a disaster. Luckily, it ended up being the former.
The prep part took me less than 10 minutes and I had a sweet little helper <3 Usually it’s pretty challenging finding time to cook because my toddler needs attention 95 percent of the time and especially so mid cooking when my hands are covered in raw egg & meat mixture. But today we tried something new. We pulled a chair and she “helped me” cook with her own kitchen utensils.
We mixed all the ingredients, formed them into a loaf and baked for an hour. The aroma coming from the oven was pure torture. I couldn’t wait to dig into this loaf. And I’m not even a loaf person!
When this beauty came out of the oven and we gave it a try, this herbed turkey loaf exceeded all my expectations. Shredded zucchini gave it just enough moisture to keep it flavorful and almond flour ended up being a perfect substitute for more traditional version’s breadcrumbs.
You can confidently serve this meal for your entire family. For the littlest ones, go with mashed potatoes on the side. Your husband might enjoy it with a giant salad and/or potatoes as well. I did just that and chopped up romaine lettuce, organic spinach, cherry tomatoes, avocados and feta for my side.
It was perfect. I ate the same thing the next day. And the next. My plan was to freeze some for later but I didn’t have any leftovers 🙂 My kids loved it too, but for a full disclosure, they’ll eat just about anything with mashed potatoes.
I made a few modifications to the original recipe to simplify it even more and so happy to share it with you! Print now or Pin for later.
- 1 lb ground turkey
- 1 Tbsp olive oil
- 1 onion, finely chopped
- ½ C shredded zucchini
- 2 large eggs, whisked
- ¼ C ketchup
- ½ C blanched almond flour
- ½ tsp garlic powder
- 1 tsp salt
- ½ tsp black pepper, freshly ground is best
- ¼ C fresh parsley, finely chopped
- 1 tsp thyme
- Preheat oven to 350 degrees.
- Line a large baking sheet with parchment paper.
- In a large bowl, combine the turkey, olive oil, onion, zucchini, eggs, ketchup, and garlic powder.
- In a medium bowl, combine the remaining ingredients.
- Stir the almond flour mixture into the wet ingredients, then knead with your hands until well combined.
- Place the mixture onto the prepared baking sheet and form it into a loaf approximately 10 x 3 inches.
- Bake for 1 hour until browned around the edges and cooked through.
